How to cook quinoa

If you want to follow quinoa diet it is important to know how to cook quinoa. Don’t be afraid because it is really easy. You cook quinoa in the same way as you cook rice or pasta. It takes about 20 minutes.

So let’s get started:

Ingredients:

  • 1 cup quinoa
  • 2 cups water or if you want cook more you cook 2 cups fo quinoa in 4 cups of water

Method:

Rinse quinoa thoroughly in cold water to remove saponins (jus for your information: most brands of packaged quinoa come pre-rinsed) and then put it in a large sauce pan.

Bring water and quinoa to a boil.

Reduce the heat and then simmer at a low boil for 15 minutes until the quinoa inverts showing a little spiral line.

Then remove quinoa from heat, if there is any excess water drains it into colander over the sink. Just place the quinoa into a bowl and fluff it a bit with fork.

After you can season it with sea salt or anything you like. It is up to you.

Quinoa-stuffed zucchini

Ingredients:

  • 4 medium-sized zucchini
  • cooked quinoa – as I explained in the basic recipe
  • 1 1/2 cups vegetable broth or just water
  • 1 tablespoon olive oil
  • 1/2 red pepper, chopped
  • 1/2 red onion, chopped
  • 1/2 cup chopped baby bella (or button) mushrooms
  • 1 tablespoon olive oil
  • 1 tablespoon sherry or red wine vinegar
  • fresh parsley
  • sea salt and pepper
  • 1 cup shredded mozzarella cheese

Instructions:

Preheat oven to 375 degrees. Slice the zucchini in half lengthwise. Use a spoon to scrape out the soft centers, leaving a hollow boat-shaped shell.

In a mixing bowl, gently mix the quinoa with the the chopped pepper, onion and mushrooms. Season it with parsley, salt and pepper. Drizzle oil and vinegar over and stir to combine.

Arrange zucchini in a shallow baking dish. Scoop the quinoa filling into the zucchini. Sprinkle mozzarella on top. Pour water into the pan to cover the bottom by 1/4 inch (this helps keep the zucchini moist while cooking). Bake for 35 minutes, until zucchini is tender when pricked with a fork. Turn on the broiler for about 2 minutes, just to brown the cheese. Serve 1 half as a side dish or 2 halves for a main course.
